French Ursuline nuns introduced beignets to Louisiana colonists in the 1700’s, starting a love affair that still exists to this day.  These light, fluffy donuts have been made hot and fresh to order by vendors in the New Orleans’ French Market since the 1860’s.  The well-established tradition of enjoying beignets in the French Quarter of New Orleans has become something of a pilgrimage for many.
